I tried some sencha tea that Luigi at work brought back from Japan and gave to me.
I looked up google to find the correct water temperature and it directed me to this website. The best temperature seemed to be 70 degrees C, so I got out my thermometer and boiled my water to that temperature and let it steep for the prescribed 60 seconds.
The result was a very interesting cup of tea. It was a little bit hay and grass but there was also a creaminess and slight hint of mushroom, which is not surprising considering that sencha tea are meant to be high in umami.
