Zucchini Pancake
I had some delicious organic zucchini that I had to use, so I made pancakes.
Grating is always the hard part. I mixed in 3 beaten eggs and 1/3 cup of pancake mix. Why pancake mix ? 1) because I was making pancakes and 2) because I didn't have any self raising flour and I figured that the buttermilk powder in the pancake mix would sweeten the mix slightly, but the baking soda was needed to fluff them up. I also grated some sheep pecorino in and added salt and cracked pepper.
The mix was then dolloped in and pan fried for a few minutes.
Another sprinkle of salt and pepper and half of them disappeared. I'll take the rest tomorrow for lunch.
